3 – EGGS (eggs and products containing them: mayonnaise, emulsifiers, egg pasta)
4 – FISH AND DERIVATES (food products in which fish is present, even in small percentages)
5 – ARACHIDS AND DERIVATIVES (creams and condiments in which they are present, even in small amounts)
6 – SOY AND DERIVATIVES (derived products such as soya milk, tofu, soya noodles and the like)
7 – MILK AND MILK PRODUCTS (any product in which milk is used: yoghurt, biscuits, cakes, ice cream and various creams)
8 – NUTS AND DERIVATIVES (almonds, hazelnuts, walnuts, cashews, pecans, cashews, pistachios)
9 – CELERY AND DERIVATES (both in pieces and in soup preparations, sauces and vegetable concentrates)
10 – SENAPE AND DERIVATIVES (can be found in sauces and condiments, especially in mustard)
11 – SESAME SEEDS AND DERIVATIVES (whole seeds used for bread, flours that contain it in small percentages)
12 – SULPHUR DIOXIDE AND SULPHITES (sulphur dioxide and sulphites in concentrations of more than 10 mg/kg or 10 mg/l expressed as SO2 – used as preservatives, can be found in: canned fish products, in pickled foods, in oil and brine, in jams, in vinegar, in dried mushrooms and in soft drinks and fruit juices)
13 – LUPIN AND DERIVATIVES (present in vegan foods in the form of: roasts, sausages, flours and similar)
14 – MOLLUSCS AND DERIVATIVES (scallop, razor clam, scallop, mussel, oyster, limpet, clam, tellina, etc.)
Fishery products served raw are subjected to rapid blast chilling to ensure quality and safety, in accordance with the requirements of Regulation (EC) 853/2004.
* In the absence of fresh produce, some products can be frozen
